How Long Do I Cook a 4 Lb.. Beef Roast in an Air Fryer
Air fryer roast beef is an easy recipe that can be served year-round. This low-carb, paleo, whole30 beef cooks in the air fryer in 30 minutes or less!
What Is Roast Beef
Roast beef is a classic beef dish where beef is…roasted. It's not rocket science, I know. If you have spent time in England, chances are you've probably had a Sunday roast or at least saw it on a menu. Along with chicken tikka masala, roast beef is one of the national dishes of England. How thin you slice your roast is up to you; slice thicker to serve the roast beef plated like for a Sunday roast dinner or slice the roast beef thin if you intend to make roast beef sandwiches or lettuce wraps.
What Cut Of Beef To Use?
Roast beef doesn't use a specific cut of beef but some are more frequently used than others. I used a 2 1/2-pound top round roast. If you want to get technical, it was a large 5-pound round roast that I cut in half. Other suggestions include bottom round roast, rump roast, sirloin roast, or eye of round roast.
Using An Air Fryer
So what is an air fryer? It doesn't actually fry your food. Really, it's a countertop convection oven. Air fryers are great for cooking food quickly and getting that fried texture by using only a small amount of oil. These appliances come in different styles and sizes. What you see here in the picture is a 6-quart air fryer that can easily fits up to 3 pounds of roast beef.
How Long To Air Fry Roast Beef
How long you cook your roast beef in the air fryer will depend on how well you like your beef cooked. The cook time in the recipe box is for a medium roast beef. If you have a food thermometer, this is the perfect time to use it. Use the temperatures below as a guide:
- 130-135F = medium rare
- 140-145 F = medium
- 150-155 F= medium well
- 155+ F = well done
Using & Storing Leftover Roast Beef
If you have leftover air fryer roast beef, there are lots of ways to re-use the meat. The most popular use for leftover roast beef is to make a roast beef sandwich. If you want your meal to be low-carb, paleo, whole30 serve your sliced roast beef over lettuce wraps. Personally, I like to make a slow cooker breakfast hash but instead of using leftover corned beef, I used leftover chopped roast beef.
Leftover air fryer roast beef should be stored in the refrigerator for up to 4 days. You can even freeze leftover cooked roast beef meat. Store the leftovers in the freezer for up to 3 months. When you're ready to use the leftover frozen roast beef, thaw the frozen meat in the refrigerator overnight first.
Tips for This Roast Beef
- Let it rest! I know it's gonna be hard but try to resist and let your meat rest for at least 20 minutes before slicing. Slicing the meat immediately will cause all the juices to run out leaving the meat dry.
- Use a meat thermometer to properly check the temperature.

I used my 6-quart air fryer for this recipe but it would have easily fit in a smaller air fryer.
- 2 1/2 – 3 pounds beef roast
- 1 teaspoon oil of your choice
- 1 1/2 teaspoons salt
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 30 minutes before you're ready to cook, remove the beef roast from the frig and let it come to room temperature.
- Drizzle the oil all over the roast.
- In a small bowl, mix together the rosemary, thyme, salt, pepper, and garlic powder. Season the roast evenly all over the the seasoning mixture.
- Place the prepared beef roast in the air fryer basket. Cook at 375 degrees for 30 minutes, flipping halfway through.
- Remove the roast beef from the air fryer. Let the roast rest for 20 minutes before slicing.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
